The first step is to make the jerky seasoning using a large bowl to mix the seasoning in. This seasoning uses onion powder, garlic powder, red pepper flakes, black pepper, brown sugar, soy sauce, teriyaki sauce and Worcestershire sauce.

Mix all the ingredients in the bowl well.

Take a large piece of flank steak and freeze for about 45 minutes to one hour. Cut into 1/4-inch thin strips, going with the grain, and put the strips into the marinade. Chef Greg says to put the beef strips in the marinade in the refrigerator from 12 to 24 hours to season. Cover the bowl with foil or plastic wrap while it marinades. The jerky seasoning will permeate the meat for cooking later.

Take the beef strips out of the refrigerator and drain slightly. Place the strips on the grill racks with space between the strips. Heat the Rec Tec Smoker to 180 degrees and put the racks in for 4-5 hours. When the meat is done, it will be slightly cracked and brittle. The jerky seasoning is easy to make and adds flavor to the finished product.
